Like we mentioned <a href="http://www.littlecookingtips.com/content/easy-cheesy-baked-leeks-bechamel-sauce" target="_blank"><em>in our last post</em></a>, we got to enjoy a little bit of snow in late January and again, in early February. But this only lasted for a few days. Most of February was (and still is) like it was April this year. The temperatures are higher than normal this winter, and this must&lsquo;ve confused nature, as the flowers are blooming and the trees are getting greener and greener, like in the spring! &nbsp;</p> <p>&nbsp;</p> <p><img alt="" src="/sites/default/files/recipe_images/littlecookingtips_winter_snow2b.jpg" style="width: 550px; height: 368px;" /></p> <p>&nbsp;</p> <p>On February, we visited another mountain village, called Seta. Like Steni, mentioned in the last post, this one is also located high up in Dirfi Mountain, in Evia (yeah&nbsp;we know; we&rsquo;re obsessed with this mountain!). That&rsquo;s where the photos with the snow that you see in this post are from.</p> <p>&nbsp;</p> <p>Unfortunately the road was closed right after the village, and we couldn&rsquo;t visit a spectacular place nearby, with wild cherries, walnut trees, a medieval church and natural springs. But it was really nice to take a walk along the mountain range and breathe some fresh air. After all, we only get to see snow for only a few days each winter. &nbsp;</p> <p>&nbsp;</p> <p><img alt="" src="/sites/default/files/recipe_images/littlecookingtips_winter_cheese2.jpg" style="width: 550px; height: 287px;" /></p> <p>&nbsp;</p> <p>The good thing about this mild and warm winter we&rsquo;re having is that it allows for long walks in the city and its groves nearby. Moreover, there were wonderful exhibitions and festivals we got to visit taking advantage of those high temperatures. We also visited a unique farmers market which takes place about once a month, where producers sell amazing vegetables and other products, like jams, honey, rusks, cheeses, olives, wine, handmade sausages and many more delicacies.</p> <p>&nbsp;</p> <p>The prices are very low, as they sell directly to customers, and there&rsquo;s tons of people visiting the venue and leaving it with big smiles and packed bags of goodies. We always try to limit our spending when we visit this particular market, but somehow we always buy more than what we originally planned for!&nbsp;</p> <p>&nbsp;</p> <p><img alt="" src="/sites/default/files/recipe_images/littlecookingtips_avocado-tuna-2b.jpg" style="width: 550px; height: 368px;" /></p> <p>&nbsp;</p> <p>So, we bought delicious homemade-style marmalades, honey, various olives, like the ones you see in the photos of this post, cheeses, fresh sausages (most of them were put right in the freezer for BBQ parties and <a href="http://www.littlecookingtips.com/content/italian-sausages-peppers-and-onions-spetzofai" target="_blank"><em>spetzofai</em></a>&nbsp;, Chios mastic halva, excellent pasta and other yummy products. There&rsquo;s nothing like buying fresh stuff straight from the producer. By the way, if you never tried quince or fig marmalade before, you&rsquo;re missing out. They&rsquo;re our new favorite choices for breakfast.</p> <p>&nbsp;</p> <p><img alt="" src="/sites/default/files/recipe_images/littlecookingtips_avocado-tuna-4.jpg" style="width: 550px; height: 385px;" /></p> <p>&nbsp;</p> <p>But let&rsquo;s get back to cooking; it&rsquo;s been some time since we posted a recipe for something simpler than a main dish. We noticed that all our posts in the last months are main dishes and our online friends sometime want something easier, quicker and healthier. So, this time we are posting our version for a healthy tuna avocado sandwich!&nbsp;</p> <p>&nbsp;</p> <p>Avocado is rarely used in Greek households, as it&rsquo;s looked upon as an exotic fruit. That&rsquo;s true actually, as up until a few years ago, all the avocados in the market were imported. This started to change though, with wonderful domestic avocados which are produced in Crete. They&rsquo;re mostly Sharwill or Hass avocados (the rounder varieties) and they&rsquo;re much more interesting than those imported Fuerte (pear-shaped) we tried in the past.</p> <p>&nbsp;</p> <p><img alt="" src="/sites/default/files/recipe_images/littlecookingtips_avocado-tuna-6.jpg" style="width: 550px; height: 367px;" /></p> <p>&nbsp;</p> <p>We only started using avocados about a year ago, after learning how important they are for one&rsquo;s health. Avocados are actually one of the healthiest foods you can eat! There are numerous studies that associate avocado consumption with cardiovascular benefits, and that&rsquo;s because avocado is high in good fats, antioxidants AND it&rsquo;s anti-inflammatory! So, even though avocado is not a common ingredient in the Greek cuisine, we try to eat as much as we can, by making lots of guacamole, adding it in salads and sandwiches etc.</p> <p>&nbsp;</p> <p>In this recipe, we combined avocado with tuna. Avocado and fish are best friends. We often serve our grilled salmon with guacamole and make avocado tuna sandwiches. Those sandwiches are an excellent choice for breakfast, picnic, or as a snack throughout the day.&nbsp;</p> <p>&nbsp;</p> <p><img alt="" src="/sites/default/files/recipe_images/littlecookingtips_avocado-tuna-5.jpg" style="width: 550px; height: 367px;" /></p> <p>&nbsp;</p> <p>For this recipe, we peel and slice avocado quarters and dip the slices in fresh lemon juice. This enhances the flavor and keeps the avocado from browning. If you haven&rsquo;t tried to slice avocado before, <a href="https://www.youtube.com/watch?v=3QwuG2v-WxI" target="_blank"><em>here&rsquo;s a great video</em></a>&nbsp;with wonderful instructions for this.</p> <p>&nbsp;</p> <p>The tuna is simple canned tuna. You can use tuna in oil or tuna in water. We like tuna in olive oil ourselves. We open the can and press the can opening on the tuna, to drain it well from the oil. We then mix with mayonnaise, a little lemon juice and paprika. We prefer smoked paprika for this recipe, as it adds a lot more flavor. If you never tried smoked paprika before, buy some and you won&rsquo;t regret it. You&rsquo;ll be adding it soon in sandwiches, dips, stews, even pasta. Simply substitute part (or even all) of it with the yogurt, the result is equally delicious.<br /> If you want a rich, decadent snack, you can also substitute some of the mayo with sour cream. It also makes for an amazing sandwich!</p> <p>&nbsp;</p> <p>We also added a few salad leaves in the sandwich; you can use any type of lettuce, arugula or salad mixes. After all, you only add a few of them, to add some crunchiness.&nbsp;</p> <p>&nbsp;</p> <p>You should&rsquo;ve seen our faces, stuffed with those sandwiches right after we finished taking some shots for the blog; pure happiness! Put the slices in the container with the lemon juice (to keep them from browning).&nbsp;Toast the bread slices (pic. 4). Perhaps you have tasted the Russian blinis.</p> <!--break--> <p>Blinis are traditional Russian pancakes/crepes (depending on the size and thickness of the dough), that are served mostly with caviar or smoked salmon and sour cream. They are considered (and they are indeed) a great festive delicacy.</p> <p>&nbsp;</p> <p><img alt="" src="/sites/default/files/recipe_images/littlecookingtips_Greek_blinis_2.jpg" style="width: 550px; height: 421px;" /></p> <p>&nbsp;</p> <p>So, inspired by this, we thought of transforming the Russian recipe to a Greek; Instead of using blini as the base for the appetizer, for us it was very easy to just use a nicely grilled Greek pita/pitta bread. We selected a small sized pita which was a bit larger than blinis, but suitable for our purpose. There are packs with 6 or 12 small pitas (about 10cm/3 inches in diameter), but if you can&#39;t find them don&#39;t worry. Just buy some regular pitas and cut them in four, forming four nice triangles. The Greek pitas are pocketless pitas, so do not choose the ones which that can be sliced open. You need the plain fluffy pocketless rustic pitas.</p> <p>&nbsp;</p> <p>We took those pitas, brushed them with good quality extra virgin olive oil and grilled them using a grill pan. You can also grill&nbsp;them in the oven using the broiler and a wire rack. If you don&#39;t care that much about the nice grill marks on the pita, you can also cook (&quot;grill&quot;) them on a simple fry pan as well. When nice and ready (grill&nbsp;marks developed), they smell so good you almost want to have them without any topping. But we didn&#39;t do that. Instead, we decided to add a beautiful fresh layer of Greek yogurt mixed with lemon juice and cream cheese. We skipped the sour cream, as we wanted a different (perhaps richer) taste to combine with the pocketless pita. On top, we added some pieces of good quality smoked salmon (cut in very thin slices) and some dill. You can add as much dill as you prefer; We also tried this recipe adding dill in the yogurt-cheese mix, and it was also really good!</p> <p>&nbsp;</p> <p><img alt="" src="/sites/default/files/recipe_images/littlecookingtips_Greek_blinis_3.jpg" style="width: 550px; height: 474px;" /></p> <p>&nbsp;</p> <p>The pitas are served right away, as -depending on the dough of the pita- they may start to harden a bit after an hour. So it&#39;s a make &amp; serve appetizer; a festive appetizer that&#39;s very quick and very easy; you just prepare the pitas, mix the yogurt-cheese condiment and assemble them. Try to have just one, as they &#39;re delicious but they &#39;re also filling! Add the juice from one of the lemons, salt, one of the garlic cloves and half a cup of the olive oil. Cover with cling film and leave it on the fridge for 1-2 hours.</p> <p>In a deep frying pan, pour&nbsp;the rest of the olive oil and put it on medium to high heat.<br /> Once the oil is hot, add the onions and saute until they are translucent. At this point add the fish fillets (without the juices from the bowl where they were&nbsp;marinated), the water, the parsley, the dill and the rest of the garlic. Add salt, pepper and stir carefully to avoid breaking the fillets into small bits.<br /> Lower the heat to medium-low and cook the fish until it remains with a little broth (about 1-2cm/0.4-0.8inch&nbsp;height). Remove the pan from the heat and start making the egg-lemon sauce:<br /> Beat the eggs in a bowl and slowly add the juice of the second lemon.<br /> Using a small ladle -or even a tablespoon- take some of the fish broth (it doesn&#39;t matter if you also scoop some&nbsp;oil/greens) and start adding it to the egg-lemon mix, while whisking continuously. Add the broth slowly, as the purpose is to increase the temperature of the egg-lemon mix close to the level of the fish&#39;s temperature. You will need almost all of the broth and oil from the fish to achieve that. The result has to be a hot yellowish sauce.<br /> <br /> Once the egg-lemon sauce is ready,&nbsp;pour it in the fish, hold the pan and swing it lightly in a circular manner for a 4-5&nbsp;seconds. Especially in this recipe, where the cream gets all the flavors from caramelized onions and wine.</p> <p>&nbsp;</p> <p>The fish we suggest using in this recipe is small flatfish fillets, which are cooked quickly. But it takes a bit of preparation, so it&#39;s great if you want to serve this in any special occasion like Valentine&#39;s, Anniversaries etc. Pair this dish with a high quality white wine and you really can&#39;t fail.</p> <p>&nbsp;</p> <p>The recipe has basically 3 phases. The 1st phase is boiling the potatoes. The 2nd phase is cooking the fish. When the fish is ready, you keep the it warm, and move to phase 3 which is frying the boiled potatoes, enhancing them with butter, olive oil, salt, pepper and good quality dry oregano.
