Extremely popular during the winter months, this dish is also served in the Christmas/New Year Holiday season.</p> <!--break--> <p>&nbsp;</p> <p>In the old times, especially in the villages, the pigs were slaughtered in December. That&#39;s why pork is still the most popular meat used in Greece during the Holidays. Furthermore, the Orthodox Christian practice requires fasting for a long period before Christmas. So, the body has not been consuming meat for quite some time. Therefore, a meat soup is a great meal to help it adjust to meat consumption again.</p> <p>&nbsp;</p> <p><img alt="" src="/sites/default/files/recipe_images/littlecookingtips_pork_frikasse_3.jpg" /></p> <p>&nbsp;</p> <p>So what&#39;s this dish about? Well, it&#39;s a delicious stew, made with a nice piece of braised pork (pork leg/ham is often used as it has less fat than other pieces), selino and avgolemono sauce.</p> <p>&nbsp;</p> <p>What is selino? Selino is a Greek/European variety of celery, which has long and thin stalks and lots of leaves. You can see it in the Ingredients picture below (right above the white bowl with the meat). You can see how thin these stalks are. The taste is a bit stronger than the American (Pascal) version (also available here as &quot;celery&quot; with Greek typing:&Sigma;έ&lambda;&epsilon;&rho;&iota;).</p> <p>&nbsp;</p> <p>But don&#39;t worry; if you can&#39;t find European celery, you can also use the Pascal variety. The taste is still great and a bit milder, making it perhaps more suitable for those not used to Greek food. In this case however, the stalks must be trimmed, and if the surface is a bit rough, it must also be peeled. Use any leaves as well, and slice the stalks in 5cm/2in pieces. If the stalks are very thick, also slice them 2-3 times lengthwise before cutting the pieces.</p> <p>&nbsp;</p> <p><img alt="" src="/sites/default/files/recipe_images/littlecookingtips_pork_frikasse_1.jpg" style="width: 550px; height: 825px;" /></p> <p>&nbsp;</p> <p>Avgolemono sauce, is a creamy delicious sauce that&#39;s made with egg and lemon. You simply beat eggs and fresh lemon juice until frothy and then slowly add the broth from the stew using a ladle while whisking continuously. The purpose of this is to equalize the temperature of the egg-lemon mixture with the food in the pot, so that the eggs will not cook when the sauce is added into the pot.</p> <p>&nbsp;</p> <p>When the sauce is warm enough (a couple of ladlefuls with broth from the pot are needed for this), you add the egg-lemon mixture in the pot, and &quot;stir&quot; using the pot&#39;s handles (you don&#39;t stir inside the pot, you simply swirl the pot for a few seconds).</p> <p>&nbsp;</p> <p><img alt="" src="/sites/default/files/recipe_images/littlecookingtips_pork_frikasse_4.jpg" style="width: 550px; height: 367px;" /></p> <p>&nbsp;</p> <p>This is a one-pot fricassee meal you will cook again and again (and again) :) It&#39;s hearty, filling, homey, and a perfect choice for any cold day. The quantity of the ingredients given here is for 2 large servings. If you like to cook for 4 simply multiply the ingredients and add 1lt/4cups more warm water. The cooking time is the same though.</p> <p>&nbsp;</p> <p>Oh, and don&#39;t forget to have some good ol&#39; crusty bread to mop up the sauce! If they&rsquo;re very thick, also slice them lengthwise in 2-3 strips. Once the oil is hot enough, add the pork (pic.1). Any meat residue in the bottom of the pot from the previous phase will be deglazed from the juices of the onion.<br /> When the onions are soft enough, add the dill (pic.6) and stir for a minute.</p> <p>&nbsp;</p> <p><img alt="" src="/sites/default/files/recipe_images/littlecookingtips_pork_frikasse_prep_d.jpg" style="width: 550px; height: 200px;" /></p> <p>Add the meat back in the pot (pic.7), stir, and add the water (pic.8).</p> <p>&nbsp;</p> <p><img alt="" src="/sites/default/files/recipe_images/littlecookingtips_pork_frikasse_prep_e.jpg" style="width: 550px; height: 200px;" /></p> <p>When the water starts simmering (pic.9), lower the heat to medium-low, cover the pot leaving a small opening (pic.10) and cook for 45 minutes, stirring every few minutes.</p> <p>&nbsp;</p> <p><img alt="" src="/sites/default/files/recipe_images/littlecookingtips_pork_frikasse_prep_f.jpg" style="width: 550px; height: 200px;" /></p> <p>When the 45 minutes have passed, add the celery (pic.11), cover in the same manner as before, and cook for 30 minutes more. If by any chance you notice that there isn&rsquo;t enough broth left at the end (depends on the temperature of cooking), then add 0.5lt (2 cups) of warm water and let it simmer for 5 more minutes.</p> <p>&nbsp;</p> <p>Before start making the avgolemono egg-lemon sauce, remove the pot from heat and keep it aside for 5 minutes. Add salt and pepper.</p> <p>&nbsp;</p> <p>Then beat the egg in a medium sized bowl and add the lemon juice while whisking (pic.12).</p> <p>&nbsp;</p> <p><img alt="" src="/sites/default/files/recipe_images/littlecookingtips_pork_frikasse_prep_g.jpg" style="width: 550px; height: 200px;" /></p> <p>Whisk until frothy, and then start adding the broth from the pot (whisking continuously), very slowly at first (pic.13). You will need about 2 ladlefuls to warm the sauce up. Then add the frothy sauce (pic.14) in the pot and swirl the pot from its handles. Prefer the leg/ham cuts, they have less fat than pork shoulder/butt. Especially the pork steaks from the pork shoulder / neck cut, that&#39;s also called pork butt in English (for some strange reason).</p> <!--break--> <p>We also love this pork cut ourselves, since it&#39;s juicier and contains enough fat to help the meat get cooked, without getting it dry in the process.&nbsp;</p> <p>&nbsp;</p> <p>The usual methods to cook pork steaks in Greece are grilling the streaks on a bbq or frying them in olive oil. The latter produces a slightly drier result, so we always prefer to bbq the steaks if possible. They are served in large family gatherings or backyard parties and are hugely popular.</p> <p>&nbsp;</p> <p><img alt="" src="/sites/default/files/recipe_images/littlecookingtips_pork_cajun_1.jpg" style="width: 550px; height: 402px;" /></p> <p>&nbsp;</p> <p>The pork steaks are usually served with <a href="http://littlecookingtips.com/content/authentic-greek-salad-horiatiki" target="_blank">Greek salad</a>, French fries, grilled bread slices (they&#39;re first sprinkled with olive oil, dry oregano and salt), feta sprinkled with olive oil and tzatziki.<br /> Make sure to try at least once the combination with hand-cut French fries and a good traditional barrel aged feta. It&#39;s simply divine!</p> <p>&nbsp;</p> <p>In Greece we don&#39;t use bbq sauces, at least not with pork steaks. The steaks are simply sprinkled with salt, pepper and dry oregano; they&#39;re cooked and then drizzled with fresh lemon juice. This helps eliminating any carcinogens that may occur in the bbq process. Always marinate the steaks with lemon or vinegar, or simply drizzle with fresh lemon juice after they&rsquo;re barbecued for a healthy result.&nbsp;</p> <p>&nbsp;</p> <p>That being said, we like to try different culinary approaches from time to time. One of our favorites is the Southeastern US approach: Cajun pork steaks.</p> <p>&nbsp;</p> <p><img alt="" src="/sites/default/files/recipe_images/littlecookingtips_pork_cajun_2.jpg" style="width: 550px; height: 367px;" /></p> <p>&nbsp;</p> <p>Cajun cuisine is a cuisine originating from Louisiana, United States. It&#39;s a peasant&#39;s version of the also popular Creole cuisine, also originating from the same region. At least that&#39;s what we non Americans know about it :)&nbsp;</p> <p>&nbsp;</p> <p>Cajun cuisine is one of our favorite cuisines, with delicious dishes. A very common application of this cuisine is a seasoning combination for meat, which we tried on our pork steaks, called &ndash;of course- Cajun seasoning.&nbsp;</p> <p>&nbsp;</p> <p><img alt="" src="/sites/default/files/recipe_images/littlecookingtips_pork_cajun_5.jpg" style="width: 550px; height: 382px;" /></p> <p>&nbsp;</p> <p>We used dry onion, dry garlic, paprika, a bit of cumin, dry oregano and thyme, salt and black pepper. If we want a spicier result, we also add cayenne pepper from time to time. Cayenne is essential in a Cajun seasoning mix, but you may omit it if you can&rsquo;t tolerate hot spices.</p> <p>&nbsp;</p> <p>You can use the same seasoning for chicken or beef (or even fish!) and add it to numerous recipes you already cook. Simply try it once. We used Guinness ourselves; you can choose any Bock, Stout or Porter beer you prefer. We added some extra virgin olive oil, garlic, a sprig of fresh rosemary (stripping the leaves), coriander powder, a little honey and mustard. Finally, we threw in a few dried plums.</p> <p>The taste of the dish was really amazing. The meat is tender and sweet (with a touch of fruit), and full of flavor! Simply put it in the marinade we will describe and let it soak in the fridge for at least 4-6 hours (ideally a whole 24 hours; it will be so much better).</p> <p>The technique to roast the meat used here is &quot;Kleftiko&quot;; Kleftiko is a Greek technique where you put the meat in some baking paper, close it inside (usually in a bag shape), and cook it slowly in an oven for 2 to 6 hours (depending on the type of meat used and the intensity of the heat). So, that&rsquo;s what we&rsquo;ll do with our pork bites. The length for each piece of baking paper should be about the same with the length of the baking pan.</p> <p>Take the bowl with the meat out of the fridge, and use a large spoon to add the meat pieces and the plums at the center of the baking sheets. Let it cook for around 30 minutes, stirring often, until it starts to become a porridge.<br /> At this point, remove from heat, discard the onion, and add the olive oil, the salt and pepper. Using a hand blender or a food processor or even a classic blender, mash the porridge into puree consistency. Let it aside to cool down.<br /> <br /> Add the olive oil in a medium sized frying pan&nbsp;and put it on medium to high heat. Once the oil is hot, add the sausages and the onion and sautee for 5-8 minutes. Add the lemon juice, the parsley and the oregano and stir for 1 more minute. Once hot add the onion. Sautee for 2 minutes.<br /> Add the&nbsp;ground meat (both pork and beef) and the garlic, and using a fork&nbsp;or a flat wooden spatula chop and stir the meat along with the&nbsp;onion and the garlic for 4 minutes until the meat is golden brown.&nbsp;<br /> Then add the pepper and continue cooking for 5 minutes, stirring&nbsp;carefully.<br /> Add the parsley and cook for another 2 minutes,&nbsp;stirring frequently&nbsp;now.<br /> Pour the wine and add the cinnamon&nbsp;stick. Stir and continue cooking for another 5 minutes, until&nbsp;the wine evaporates.&nbsp;<br /> Add the tomato, the tomato paste, the spearmint, season with&nbsp;salt and pepper and stir.<br /> Cook for&nbsp;another 5 minutes. When the filling thickens remove the cinnamon stick.<br /> Cook until you get&nbsp;a firm result.<br /> Leave aside to cool and begin to&nbsp;make the crepes.</p> <p>&nbsp;</p> <p><strong style="line-height: 1.6em;">For the crepes</strong><br /> Heat (on high heat) a frying pan (28cm/11inches). Pour aproximately 5 tablespoons of the porridge&nbsp;in the center of&nbsp;the&nbsp;pan (you can add the&nbsp;5 tablespoons in a large spoon and see how much you need for each&nbsp;crepe) and quicly start to turn&nbsp;the pan clockwise, to spread it.<br /> Leave it until it thickens (no more than 10 sec. - when the ends begin to&nbsp;turn brown) and then with a flat wooden spatula flip the crepe&nbsp;to the other side and leave it again for 8-10 sec. Continue with the&nbsp;same&nbsp;process until all of the porridge is used. The&nbsp;amount in this recipe is&nbsp;for 6 crepes.</p> <p>&nbsp;</p> <p><strong style="line-height: 1.6em;">For the baking</strong><br /> Grease a medium sized pyrex or ceramic baking pan(casserole). Take one&nbsp;crepe and add 3 tablespoons of filling&nbsp;in the middle,&nbsp;lengthwise&nbsp;.<br /> Roll the crepe&nbsp;tightly and carefully put it in the pyrex&nbsp;(the end of the roll facing down).<br /> Continue doing so with the&nbsp;rest of the crepes.<br /> Sprinkle the grated graviera and the gouda&nbsp;and bake at 200 degrees Celsius/390 Fahrenheit&nbsp;until the cheeses melt. Remove from the oven and serve.
