Smooth sour cherries cheesecake in a glass

A fast and easy way to create your own smooth homemade cheesecake, with a rich cream and sour cherries! A dessert that you can enjoy almost immediately, as you don't need to put it in the fridge for long.

 

 

 

 

 

Ingredients: 

- 300gr/10.5oz cream cheese
- 200gr/7oz sweetened condensed milk (about 1 can)
- 2 teaspoons of lemon zest
- 1 1/2 teaspoons of lemon juice
- 125gr/4.4oz of digestive biscuits finely crushed
- 200gr/7oz of sour cherries in syrop (canned)

 

 

 

Put the cream cheese and the sweetened milk in a large bowl (pic.3). Using an electric hand mixer combine until you get a smooth and foamy result (around 3-4 minutes). Start at a slow speed and turn it up as the cream thickens (pic.4).  Add the zest and the lemon juice and continue to mix for about half a minute (pic.5). 

 

In a short glass add 2 full teaspoons of crushed biscuits (pic.6), then 2 tablespoons of cream (pic.7).

 


Repeat the process (pic.8) and garnish with 2 tablespoons of sour cherries (pic.9). 

 

Do the same in 3 more glasses and put them all in the fridge for 20 minutes.
As simple as that! Enjoy!

 

Tips: 

1. Make sure that you won't let the cheesecake for more than 20 minutes in the fridge. This way you get a fluffy result.
2. You can choose anything you like for garnishing as long as it's a little bit sour (eg. lemon).
